Overview
The Peninsula London is seeking a Bar Chef de Rang to join the team within our Brooklands Bar. The role involves leading a team of Commis Waiters and delivering high levels of service. Brooklands restaurant offers contemporary European cuisine from Michelin-starred Chef Director, Claude Bosi, and a distinguished drinks program in a setting inspired by the classic eras of British aviation and motorsport.
The venue, designed by London architects Archer Humphryes, features a sleek main dining room and a panoramic outdoor terrace with views across London.
Key Accountabilities
* Promote The Peninsula London as a recognised culinary destination by creating memorable guest experiences through friendly, unobtrusive service with a passion for excellence.
* Understand and follow the sequence of service standards.
* Understand the menus and all food and beverage items ordered, including ingredients, methods of preparation, and appropriate style of service.
* Ensure proper usage of all food and beverage items and appropriate use of equipment, tools, and service equipment.
* Utilise the POS system.
* Observe and maintain the daily condition of all physical facilities and equipment in the restaurant and public areas, and make recommendations for corrections and improvements as needed.
General Requirements
* Good knowledge of food and beverage trends in service and culinary experience.
* Experience in a similar role in a fine dining restaurant or luxury 5* hotel.
* Excellent time management and organisational skills, highly adaptable, naturally positive.
* Good communication skills, flexibility, and ability to work under pressure.
