OMA + AGORA opened last year in the heart of Londons thriving Borough Market. Two restaurants in one building, where OMA is inspired by the fishing villages and shores of the Greek isles and further Levant, and AGORA is inspired by the energy of Athenss markets and streets. About the role.
We are looking for an experienced Head Baker to join our team. You will lead a team of six to eightbakers, overseeing the expansion and refinement of our production processes of breads and pastries.
Please note, this is an early start/early finish role [some night hours to be expected].
The ideal candidate will have experience working in fast paced and dynamic kitchens but most importantly take pride in the food theyprepare.Candidates should have experience in volume and driving efficiency of production whilst maintaining standards and specifications. This is a hands-on role but also one that requires some computer literacy [ rotas, leave schedule, HR ]and uses system generated data to work with our senior chef team on optimising par levels and production.
Responsibilities.
* Review and maintain ordering process
* Prepare rotas and manage leave requests for the bakery team
* Prepare and bake a wide range of bakery goods including bread, cakes, pastries, and desserts
* Develop new recipes
* Follow existing recipes and adhere to food safety standards
* Operate kitchen equipment such as ovens, mixers, and dough sheeters
* Monitor baking process to ensure quality and consistency
* Following and maintaining HACCP procedures.
* Supporting the wider kitchen team with daily tasks and processes.
* Being an ambassador for our brand through exceptional teamwork and fostering a supportive environment.
Requirements.
* Must be fully trained in baking breads and pastries
* Previous experience in a similar environment.
