Job Summary
We are looking for a talented and motivated Senior Sous Chef to support the Head Chef in managing our Nigerian speciality kitchen. The role involves preparing and presenting authentic Nigerian dishes, supervising junior chefs, and ensuring food quality, consistency, and hygiene standards are maintained at all times. The Senior Sous Chef will assist in menu execution, oversee daily kitchen operations, and step in to lead when the Head Chef is absent. This is an excellent opportunity for an ambitious chef with strong Nigerian cuisine experience to develop their leadership skills and grow with a rapidly expanding restaurant brand.
Key Responsibilities:
* Support the Head Chef in overseeing daily kitchen operations, ensuring smooth workflow and high culinary standards.
* Prepare, cook, and present authentic Nigerian dishes with consistency and attention to detail.
* Supervise, train, and motivate junior chefs and kitchen staff, fostering a positive and efficient team culture.
* Monitor stock levels, assist with ordering, and ensure proper storage and rotation of ingredients.
* Enforce food hygiene, safety, and HACCP compliance at all times.
* Assist with menu development, seasonal specials, and new recipe trials.
* Manage portion control, waste reduction, and cost efficiency in the kitchen.
* Step into the Head Chef's role during their absence, ensuring continuity of kitchen leadership.
Requirements – Senior Sous Chef
* Minimum 3–5 years' professional kitchen experience, including at least 1–2 years in a Sous Chef or Senior Chef role.
* Proven expertise in preparing and presenting authentic Nigerian cuisine (e.g., Jollof rice, Fried Rice, Suya Grills, Egusi Soup, Afang Soup, Pepper Soup, Asun, grilled fish/meats, etc.).
* Strong leadership and supervisory skills with the ability to train and motivate a diverse team.
* Good knowledge of kitchen operations, stock control, portion management, and cost efficiency.
* Familiarity with HACCP, food hygiene, and safety standards.
* Ability to thrive in a fast-paced, high-volume environment.
* Excellent communication and teamwork skills.
* Relevant culinary qualifications preferred
