Responsibilities
* Take responsibility for the daily breakfast operations of both Front of House and Kitchen teams, ensuring smooth and efficient service.
* Assist the Food and Beverage Manager in developing and implementing the business plan, identifying commercial opportunities to maximise revenue and deliver against budget targets.
* Lead by example in delivering a memorable breakfast experience that exceeds guest expectations.
* Ensure compliance with all health and safety regulations while maintaining a clean, safe, and welcoming environment.
* Support recruitment, training, and coaching of new team members across FOH and BOH, fostering a positive, service‑led culture.
* Oversee the planning and delivery of rotas to meet business needs while maintaining excellent service standards.
* Monitor food quality and presentation, ensuring consistency with the hotel’s high standards.
* Maintain effective stock control, oversee breakfast pricing in the catering software system, and ensure all financial procedures are followed accurately.
* Assist in the analysis and use of financial data to drive optimum performance.
* Liaise with suppliers and clients, sourcing locally where possible and promoting sustainability and quality.
Qualifications
* Previous hospitality experience at managerial level.
* Previous 4‑star hotel restaurant experience.
* Experience in a Rosette environment is preferred but not essential.
* Customer‑focused approach with excellent customer service skills.
* Experience in handling customer complaints and guest requests professionally.
* Excellent team‑leading skills with the ability to motivate and inspire.
* Clear and concise communication with guests and colleagues.
* Excellent organisational skills with the ability to multi‑task and troubleshoot under pressure.
* A well‑organised, outgoing, and service‑minded personality.
* Confident and courteous manner.
* The ability to coach, lead and motivate a team to deliver first‑class service.
* Strong organisation and planning skills, with the ability to manage multiple priorities.
* A good command of English is essential; a second language is advantageous.
* A positive, proactive approach to delivering service excellence and driving commercial success.
