We are looking for a Sushi Chef with strong knowledge to be part of our client’s team, based in Canterbury.
THE SUSHI CHEF
Responsibilities include but are not limited to the following:
* Follow proper Food Safety guidelines and safety policies.
* Ensure that all food products are consistent with recipes.
* Prepare various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
* Monitor closely the mise en place requirements for the relevant section.
* Maintain all mise en place at a sufficient level to ensure an uninterrupted flow of food during service, controlling quality, consistency, appearance, and taste.
* Work straight or split shifts depending on the needs of the business.
* Check incoming goods are consistent with the relevant order sheet, quality specifications, and transfer to the appropriate kitchen section, minimizing wastage.
* Perform daily checks to ensure storage areas are maintained hygienically.
* Oversee correct handling of raw products, ensuring quantities are prepared according to recipes.
THE IDEAL CANDIDATE
* Minimum 2 years of relevant experience preparing sushi of the highest quality in a high-end, high-volume kitchen.
* Excellent knife and food preparation skills.
* Attention to detail and a passionate personality.
* Ability to work creatively in a high-paced environment.
* Innovative, creative, and flexible approach to traditional cuisines.
