Overview

Buckland Manor, one of the most elegant country house hotels in the Cotswolds, offers employees the opportunity to work within a traditional, yet friendly English country house hotel. The hotel is part of the AA Hotel Group of the Year 2017-18, set in 10 acres of grounds, with 4 AA red stars, 3 AA rosettes, and a member of Relais & Chàtelaux since 1995. The hotel can offer on-site staff accommodation to help new team members settle into life at the hotel and local area.

Salary: £38,000 to £40,000 per annum, plus service charge

Service charge: can be in the region of £305 a month (around £3,600 per year) for a full-time employee.

Role: As a Sous Chef, you will be working alongside the Head Chef to run a busy kitchen and create exciting and delicious dishes to be served to guests in our 3 AA rosette restaurant.

This role would suit someone who has worked in a similar environment previously.


Responsibilities

* Preparation of fresh food
* Leadership of a section
* Using your advanced knife skills
* Advanced knowledge of allergens
* Partaking in the cleaning rota
* Labelling of food on your section
* Completing daily kitchen audits
* Writing allergen matrix
* Ordering stock on Procure Wizard
* Management of kitchen team
* Running of service
* Kitchen staff rotas


Qualifications and attributes

* You should be a hands-on chef who leads from the front
* Knowledge of different cooking styles
* Good at developing others
* Ready to be part of the kitchen management team
* Passion, warmth and humour to ensure guests have an amazing experience
* Positive, engaging personality with self-motivation and ability to thrive in a busy hotel atmosphere
