We are now seeking an experienced and passionate Sous Chef to join our culinary brigade and help craft memorable dining experiences that reflect the future of JA Mar Hall. The Role As Sous Chef, you will support the Sernior Sous Chef and Executive Chef in leading a dynamic, talented kitchen team - delivering inspired dishes, driving standards, and contributing to menu development across our refined dining experiences. You’ll bring creativity, leadership, and a passion for exceptional cuisine while helping guide the team through an exciting period of growth and transformation. You’ll play a key role in shaping the standards, training, and culture of the kitchen, and be the responsible Chef in charge of services, ensuring seamless service and exceptional guest satisfaction. Key Responsibilities Culinary Excellence & Operations Support the Senior Chefs with menu design, seasonal development, and innovation. Oversee daily food preparation and cooking to ensure consistency, quality, and beautiful presentation. Maintain high standards of cleanliness, organisation, and food safety at all times. Ensure smooth operation of the kitchen in the Head Chef/ Senior Sous Chef's absence. Team Leadership & Development Train, coach, and mentor kitchen colleagues to improve technique, confidence, and capability. Support scheduling, performance reviews, and overall team motivation. Foster a positive, collaborative kitchen culture aligned with JA’s standards of luxury hospitality. Cost & Stock Management Manage stock control, ordering, and kitchen inventory. Support food cost management and waste reduction through smart planning and best practice. Compliance & Safety Uphold all food hygiene, health & safety, and HACCP standards. Lead by example in maintaining a safe, compliant, and efficient kitchen environment. About You We are looking for someone who brings: Proven experience as a Sous Chef or Senior Chef de Partie in a quality, high-volume, or luxury environment. Strong culinary techniques, creativity, and an eye for detail. Ability to support menu development and produce high-quality dishes in both taste and presentation. Excellent leadership skills and experience training a diverse culinary team. Strong organisational skills and the ability to thrive in a fast-paced kitchen. A positive, solutions-focused attitude with the ability to remain calm under pressure. A passion for Scottish produce, seasonality, and delivering exceptional dining experiences.
