Join The Macallan Estate's esteemed culinary team as a Sous Chef on a 12 month fixed term contract and embark on an exciting professional journey. As a vital member of our culinary team, this role will collaborate closely with the Head Chef to curate exceptional dining experiences throughout The Macallan Estate, including TimeSpirit. The TimeSpirit gastronomy experience at The Macallan Estate opened last year in partnership with the Michelin-starred Roca Brothers from El Celler de Can Roca, marking the next chapter in gastronomy for The Macallan Estate. The Sous Chef will assist in creating enticing, seasonal menus that reflect The Macallan brand ethos, and will lead, motivate, and nurture the kitchen team to deliver 5-star service and culinary excellence. The role involves sourcing and serving the best local produce in line with Visit Scotland Taste Our Best criteria. This is an opportunity to contribute to the culinary legacy of The Macallan Estate, where innovation, quality, and guest satisfaction are paramount.
Responsibilities
* Assist the Head Chef to lead, inspire and develop the kitchen team to achieve the highest standards of delivery and professionalism at all times
* Ensure the culinary experience is consistently presented as a 5-star establishment, maintaining a high standard of cleanliness and organisation in both customer and non-customer facing areas
* Continually develop the culinary experience at The Macallan Estate in line with The Macallan global strategy
* Monitor and maintain consistent food standards and quality across The Macallan Estate
* In the Head Chef’s absence, be fully aware of and communicate daily business needs to the kitchen team by attending daily briefs and referring to operation sheets, notice boards, diaries and rosters
* Attend weekly operational meetings to understand future business
* In the absence of the Head Chef, take accountability for day-to-day running of the kitchen service
* Train and develop the kitchen team, keeping accurate training records
* Purchase locally sourced food and related products using approved suppliers in line with Taste Our Best criteria
* Ensure full compliance with all food hygiene and health and safety regulations including HACCP, COSHH and other distillery-related due diligence
Qualifications
* Experienced Sous Chef within hospitality, preferably at a 5-star establishment
* Motivated with effective communication and leadership by example
* Previous luxury/hospitality experience is highly advantageous
* Ability to lead, manage, develop and train a team to deliver high culinary standards
* Experience in menu planning using locally sourced and seasonal produce
* Stock control and budget management experience
* Food hygiene certifications
* Collaborative with stakeholders in the business; experience with rosters and staffing is beneficial
* Willingness to contribute to a diverse, inclusive team and add value to Edrington more broadly
