This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 8 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar).

About Mei Ume:
Mei Ume offers traditional Chinese and Japanese dishes with a modern approach. Showcasing two of the greatest Asian cuisines under one roof, the restaurant presents a colourful selection of sushi, sashimi and Chinese main course dishes.
What you will do
* Take ownership of the sushi section, ensuring every dish meets the highest standards of quality and presentation
* Prepare and present sushi and sashimi with precision and artistry
* Oversee mise en place and service for your section, supporting the team during busy service periods
* Collaborate with the culinary team to develop seasonal sushi offerings and innovative menu items
* Maintain impeccable hygiene, safety, and food quality standards in line with Four Seasons policies
* Mentor and support junior team members, fostering a culture of excellence
What you bring
* Formal culinary training or equivalent hands-on experience
* Proven expertise in sushi preparation, knife skills, and handling premium ingredients
* Previous experience in a similar role within a high-end or luxury environment
* Knowledge of Chinese cuisine and other Asian specialities is an advantage
* Strong organisational skills and the ability to thrive in a fast-paced kitchen
* A collaborative spirit and passion for delivering exceptional guest experiences
* Good command of English
* The right to work in the UK
