We are seeking a Sous Chef to support the Head Chef in maintaining and developing a disciplined, high-performing kitchen.

The role
This Sous Chef position is hands-on and suited to someone equally comfortable leading service and developing a team.
As Sous Chef, you will work closely with the Head Chef to ensure the kitchen operates with precision, consistency, and attention to detail. A strong understanding of seafood and Italian cuisine is essential, alongside a respect for product and seasonality.
The Sous Chef will take ownership of the kitchen in the Head Chefs absence, maintaining standards across preparation, service, and organisation.
Responsibilities
Deliver consistent, high-quality dishes with attention to detail
Maintain a clean, organised, and disciplined kitchen
Support menu development with a focus on coastal Italian cuisine
Train and develop junior chefs, setting clear expectations
Oversee stock control, ordering, and cost management
Ensure all food safety and HACCP standards are upheld
Work closely with the Front of House team to maintain a seamless service
Requirements
Proven experience as a Sous Chef in a high-end, high-volume environment
Solid understanding of Italian cuisine, particularly seafood
Calm, composed, and structured in approach
Strong leadership presence with the ability to develop a team
High standards, with a consistent and detail-driven mindset
Pre-opening exposure is advantageous
