Job Description
At Fairmont St Andrews, we create unforgettable moments in one of Scotland’s most iconic luxury resorts. We are seeking an experienced and visionary Assistant Director of Food & Beverage to support the strategic leadership of our restaurants, bars, and banqueting operations. This is a key leadership role, working alongside the Director of F&B to deliver world-class guest experiences while driving commercial success.
What you will be doing:
1. Lead and support the daily operations of multiple restaurants, bars, and event spaces, ensuring seamless service and exceptional standards.
2. Inspire, mentor, and develop F&B leaders and their teams to reach their full potential.
3. Assist in setting departmental strategy, managing budgets, and overseeing P&L performance.
4. Ensure labour costs, payroll, and productivity are aligned with revenue goals.
5. Partner with Talent & Culture on recruitment, training, and retention of top talent.
6. Drive F&B sales through innovative promotions, guest engagement, and upselling initiatives.
7. Maintain rigorous stock control, purchasing procedures, and compliance with liquor laws.
8. Champion guest satisfaction by anticipating needs, responding to feedback, and elevating the overall dining experience.
9. Uphold standards of health, safety, and hygiene across all outlets.
10. Contribute to forecasting, reporting, and long-term planning for the F&B division.
Qualifications
Your experience and skills include:
11. Proven leadership experience in Food & Beverage within a luxury hotel, resort, or large-scale operation.
12. Strong business and financial acumen with expertise in budgeting and P&L management.
13. A passion for hospitality and creating exceptional guest experiences.
14. Excellent communication, leadership, and decision-making skills.
15. Ability to thrive in a fast-paced environment while maintaining attention to detail.
