You will be a hands-on, passionate, and creative leader responsible for developing a progressive drinks program that complements the restaurants innovative culinary vision, delivering exceptional experiences for every guest in a dynamic and inspiring environment.

Bar Manager Requirements Previous experience as a Head Bartender or Bar Manager in a high-end or Michelin-rated environment
Proven ability to design and implement an innovative cocktail and beverage program
Deep knowledge of classic and contemporary cocktails, spirits, and wine
Skilled in training, inspiring, and developing a team to deliver world-class service
Understanding of bar financials, stock management, and cost control
Enthusiastic, creative, and proactive with exceptional attention to detail
Passionate about hospitality and storytelling through drinks
A warm, engaging personality and the desire to grow within an ambitious and expanding restaurant group

Tom Sellers
Hailing from Nottingham, Tom Sellers is a two Michelin-starred Chef who opened his first restaurant, Restaurant Story, at 26. At launch, Toms unique approach garnered significant critical acclaim, being awarded a Michelin Star just five months after opening, with a second star following in 2021. Tom learned his craft from some of the worlds most influential Chefs and spent time working alongside the likes of Tom Aikens in London, Thomas Keller at three Michelin-starred Per Se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen, all before the age of 21. Story Cellar, a Parisian-inspired rotisserie restaurant, opened in 2023 to much critical acclaim, followed by Dovetale at 1 Hotel Mayfair a sustainably minded, produce-led restaurant featuring reimagined European classics, dishes cooked over the grill, and an abundant raw bar.
