Position Summary
As a Junior Sous Chef at St Pancras Renaissance Hotel, you will supervise the day-to-day kitchen operations, ensuring that food is produced and served to the highest quality. You will also support the wider Culinary senior team with operational and people management tasks.
Responsibilities: Your role includes
1. Ensuring proper portioning, arrangement, and garnishing of all dishes.
2. Serving food in proper portions and ensuring proper presentation.
3. Informing service staff of menu specials and out-of-stock items.
4. Preparing hazardous foods at correct temperatures according to HACCP guidelines.
5. Following personal hygiene procedures for food safety.
6. Ensuring compliance with food safety policies, including FIFO, dating, labelling, and storage.
7. Monitoring food quality and notifying managers of any issues.
8. Controlling food waste by monitoring preparation quantities and portions.
9. Communicating during busy periods to ensure service quality.
10. Operating kitchen appliances to prepare foods.
11. Checking appliance and food temperatures and reporting issues.
12. Reporting maintenance issues promptly.
13. Staying updated on Food Safety Programs and regulations.
14. Monitoring food quality during preparation and service.
15. Preparing cold foods like salads, sandwiches, and dressings.
Qualifications:
* Level 2 Food Hygiene and Safety for Catering Certificate
* Food Allergy and Intolerance Training Certificate
