What you'll be doing as a Head Chef:
* Ensure kitchen operations meet budgeted targets.
* Lead and mentor a team of kitchen staff, including sous chefs, chef de parties, and commis chefs.
* Maintain high standards of food quality and consistency.
* Understand budget construction and influence profit and loss results.
* Maintain control of expenditure at all times.
* Complete and check par stocks of equipment monthly, reporting monetary value to the accountant.
* Assist in budget preparation and control expenditure through vigilant procedures and price negotiation with suppliers.
* Manage kitchen rotas and salaries to meet budgeted payroll forecasts.
* Evaluate performance and product regularly to identify future challenges.
* Ensure effective daily communication with Bistro and Meetings at the hotel.
