We pride ourselves on providing a diverse range of high-quality products, from traditional Scottish fare to local delicacies and fine foods. We are currently looking to recruit an experienced Master Butcher to head our premium award winning Butchery Department within our Food Hall.
The successful candidate will be responsible for maintaining our established reputation of quality, craftsmanship, and unrivalled service that puts us ahead in the luxury retail market in our ongoing quest for success.
Role responsibilities
1. Manage all aspects of the Butchery Department, from product selection and procurement to presentation and selling.
2. Demonstrate expert knowledge and skills in butchery, including deboning, trimming, grinding and packaging of various types of meats.
3. Provide superior customer service, advising customers on the best choice of meats and poultry based on their needs and preferences.
4. Ensure all products are of the highest quality, meeting or exceeding the standards of The House of Bruar and the local health regulations.
5. Train and mentor junior butchers/counter assistants, instilling a commitment to quality, a deep understanding of our products and a dedication to excellent service.
6. Oversee stock control and inventory, ensuring that all meats and poultry are adequately stocked and waste is minimised.
7. Ensure compliance with all relevant food hygiene and workplace safety regulations.
Who we need
8. Extensive experience as a Butcher, with a deep understanding of different meat types, their uses, and butchery techniques.
9. Previous experience managing a team, with a strong ability to mentor and develop skills in others.
10. Enjoy working with people and be passionate about delivering exceptional standards.
11. Excellent customer service skills, with a proven ability to communicate effectively and build customer relationships.
12. Knowledge of health and safety regulations related to food preparation and storage.
13. A passion for high-quality food and a commitment to maintaining the high standards of The House of Bruar.
14. Formal training in butchery or a related field is essential.
