Chef de Partie Nora
£16 Per Hour, 6 shift (1 double, avg. 48 hours per week)
Working schedule: Full Time
Contract: Permanent post 3 Month Probation
Nora is not your typical Turkish restaurant.
We are searching for a Chef de Partie with proven experience working in both high volume kitchens as well as high end plating services with a focus on seasonal menu changes, adaptation to recipe adjustments, a well defined palette capable of identifying key flavours that are present in the dishes we work with as well as an ability to produce consistent results.
Role requirements:
Running an individual section and supporting the wider kitchen.
Working in all sections.
Supporting grill and open fire cooking.
Train and guide Commis Chefs as well as Kitchen support.
Work directly on executions of kitchen and menu development ideas
Maintain an excellent practice of HACCP as well as an excellent understanding of Food and Hygiene practices and Allergens present within the kitchen.
Managing stock control and understanding par levels within each section.
20 to 40 covers at lunch per day and up to 80 to 200 covers for dinner.
Recommended experience includes:
All round kitchen experience within each section working with pastry, fryer sections, fish sections, raw meat sections and Larder sections.
Background in Modern Mediterranean, Turkish or Levantine cuisine.
Experience in a high quality or premium casual kitchen.
Interest in Fire cooking, grill or open fire cooked food.
The kitchen is a decent size optimising space as well as equipment to create the most impacting flavourful experiences possible for our customers.
Working hours expected are up to 48 hours per week with a rotation of days as well as an expectation to rotate stations in order to focus on chef growth and development as well.
