Join the University of Nottingham as a Research Fellow (Fixed Term) in the Nutritional Composition and Digestibility Lab (NCDL) at the Sutton Bonington Campus. This fixed-term post is part of a project funded by the BBSRC Biofortification Hub to develop iron-biofortified fungal mycelium for human nutrition.
The role involves using the INFOGEST static in vitro digestion system to determine iron bioaccessibility and amino acid digestibility for protein quality estimation, alongside Caco-2 cell models to assess iron uptake. The successful candidate will work with fermentation scientists to optimise fermentation parameters and apply advanced analytical, microscopy, and cell culture techniques.
Candidates should have a PhD (or equivalent) in food science, nutrition, or a related discipline, with experience in in vitro digestion, nutritional analysis, and techniques in examining food structure. Experience with cell culture methods is desirable. Strong communication skills, initiative, and the ability to work collaboratively are essential.
The post is full-time (36.25 hours per week) and available for 8 months, starting in November 2025. The salary is £35,116 to £46,735 per annum pro-rata, depending on skills and experience.
