We are seeking an experienced and passionate Senior Sous Chef to join our dynamic hotel kitchen team in Rugby. Working closely with the Head Chef, you will play a key leadership role in delivering exceptional dining experiences across our restaurant, bar, and event spaces. This is a fantastic opportunity for a talented chef ready to step up or an existing Senior Sous Chef looking for a fresh challenge in a supportive and high‑quality environment.
Key Responsibilities
* Support the Head Chef in the day‑to‑day running of the kitchen, ensuring smooth service across all food outlets.
* Lead, motivate, and mentor the kitchen team, promoting a positive and professional working culture.
* Assist in designing seasonal menus, contributing creative ideas and ensuring dishes meet brand and guest expectations.
* Maintain high standards of food quality, presentation, and consistency.
* Oversee ordering, stock rotation, waste management, and supplier relationships to ensure cost‑effective operations.
* Ensure all health, safety, and hygiene standards are met and maintained, including compliance with HACCP and hotel policies.
* Take charge of the kitchen in the Head Chef's absence, ensuring seamless continuity of service.
* Support training and development of junior chefs to help grow their skills and confidence.
About You
* Proven experience as a Sous Chef or Senior Sous Chef in a hotel, premium dining, or high‑volume environment.
* Strong leadership skills with the ability to develop and motivate a team.
* A passion for fresh, high‑quality food and a keen eye for detail.
* Excellent organisational and communication skills.
* Knowledge of current food trends and a desire to innovate.
* Understanding of kitchen financials-including GP margins, wastage, and labour control.
* Flexibility to work evenings, weekends, and across different service periods.
