The Role: Pastry Sous Chef We are looking for a talented and passionate Pastry Sous Chef to support the Head Pastry Chef in the day-to-day running of our pastry kitchen. This is a key role within our culinary team, ideal for someone with creativity, precision, and a drive to deliver exceptional quality. You’ll play a vital role in crafting outstanding desserts and baked goods that reflect the high standards of our estate, while supporting and mentoring the wider pastry team. Oversee the preparation, production, and presentation of all pastries and desserts, maintaining high-quality standards. Contribute to menu development, suggesting creative and innovative dessert ideas to excite and delight our guests. Mentor and supervise junior pastry staff, fostering a collaborative and educational work environment. Ensure all food safety and hygiene standards are adhered to, in line with health regulations. Manage inventory and stock levels for the pastry section, ensuring only the freshest and highest-quality ingredients are used. Monitor production during service hours, ensuring timely delivery of desserts and pastries. Assist with the preparation of special events, banquets, and seasonal offerings, ensuring the pastry section plays a key role in these occasions. Person Specification: Essentials: A passion for creating exquisite, mouth-watering desserts and pastries. Expertise in advanced pastry techniques and a keen eye for visual appeal. Proven experience in a similar role at a high-end restaurant or hotel. Strong commitment to working within a collaborative team that upholds high standards and quality. In-depth knowledge of food safety regulations, modern pastry trends, and quality ingredients. Ability to thrive in a fast-paced, high-pressure environment, with the resilience to work long hours and extended periods on your feet. Desirables: Experience managing large volume covers. Strong interpersonal and communication skills. Food Safety Training. A willingness to share knowledge and continuously learn new skills. A culinary degree or relevant professional certification is preferred. Shift Patterns: 45 hours per week, working 5 days out of 7, including weekends, holidays, and evenings. Typical shift patterns: 08:00 – 17:30 13:30 – 23:00 Full flexibility is required, as you will be expected to adapt to the team’s and business’s needs.
