Restaurant Manager - Luxury Flagship Venue, Edinburgh City Centre About Us We are a prestigious dining destination located within one of Edinburgh's most iconic retail environments. Renowned for exceptional cuisine and impeccable service, we cater to an international clientele of fashion lovers, foodies a nd luxury shoppers. We are currently looking for an inspiring and experienced Restaurant Manager to lead the team in our high-volume Brasserie and Bars. The Role As Restaurant Manager, you will be the driving force behind the daily operations of our Brasserie and Bars. Reporting directly to the Hospitality Manager, you will take ownership of the guest journey, ensuring every visit is a 5-star experience. You will lead by example, fostering a culture of excellence, warmth and high performance. Key Responsibilities: Operational Excellence: Oversee the smooth running of the restaurant, bar and floor teams, always ensuring flawless service delivery. Commercial Acumen: Drive commercial performance by analysing sales and profitability, managing budgets and preparing weekly reports to support business decisions. Team Leadership: Recruit, trainand mentor a passionate team. Motivate your staff to reach their full potential and champion a positive, value-driven culture. Guest Experience: Manage reservations and guest feedback with care, consistently upholding the highest standards of service and attention to detail. Marketing & Events: Lead marketing initiatives and in-venue promotional activity to maximise exposure and revenue. Stock & Compliance: Monitor stock levels, place orders a nd maintain exceptional standards of hygiene, safety and quality control. Flexibility: Enjoy a dynamic work environment where weekend and evening work is required to ensure our guests receive the best possible service. About You To succeed in this role, you will be a natural leader with a passion for luxury hospitality and a keen eye for detail. Experience: Proven leadership experience in a high-end, high-volume dining environment. Service Focus: An outstanding commitment to customer service and the ability to create memorable guest experiences. Industry Knowledge: Excellent knowledge of food, beverage and current industry trends. Communication: A strong communicator with the ability to inspire your team and build relationships across all departments. Professionalism: A polished, professional demeanour that reflects the high standards of our brand.
