As Sous Chef, you will work closely with our Head Chef and wider kitchen team to ensure the smooth running and culinary excellence of the kitchen. This role is ideal for a strong Senior Chef de Partie or established Sous Chef looking to take the next step in a busy, high-quality hotel environment.

What You’ll Be Doing:
* Support the Head Chef in the day‑to‑day running of kitchen operations
* Oversee kitchen sections to ensure smooth, efficient service
* Prepare and cook dishes to specification, ensuring consistent quality, taste, and presentation
* Uphold impeccable hygiene standards and strictly follow all food safety regulations
* Train, support, and mentor junior kitchen staff
* Assist with stock control, ordering, and waste reduction
* Ensure high standards are maintained across all services
What We’re Looking For:
* Proven experience as a Senior Chef de Partie or Sous Chef in a quality restaurant or hotel environment
* Strong leadership and organisational skills
* Passion for food, particularly Scottish produce and seasonal ingredients
* Ability to work well under pressure in a fast‑paced kitchen
* Excellent communication and a strong team‑focused attitude
* Reliable, punctual, and committed to high standards
* Flexibility to work various shifts, including evenings and weekends
