One of Scotland's most special kitchen roles.
Reflecting on the most recent 3 decades, we have seen multiple individuals in this role with timelines of years of well-established consistency at Balbirnie House, then go on afterwards to become Executive Chefs in hotels such as Gleneagles, Turnberry, and Old Course St Andrews.
We are hoping to see a new Executive Chef join Balbirnie House similarly with a mutually hoped for scope, for years working in a very happy and productive role.
Opportunity to join a well established management team, with a superb underpinning infrastructure to support the role. Marketing is all in-house, very extensive across the spans of media, driven also by internal databases.
Whilst there are obviously some office-based administrative tasks, most of this role is operationally hands-on, leading and inspiring our kitchen brigade.
80% of Balbirnie's entire existing annual trade is banqueting, weddings, and special events.
Future diaries as busy as we have ever seen.
The other 20% of trade is individual bedroom reservations, afternoon teas, and Orangery and public area dining. We hope that the successful applicant will bring a strong commercial perspective, seeking to enhance these aspects and maximise revenues in particular. We are accustomed to working with four definitive seasonal changes of menus.
Formats we are currently working with in Orangery are working well, broadly speaking we wish to maintain these. Albeit as always, refined with new dishes etc ... All current info on our website.

Role involves:
- Overseeing all Purchasing and Procurement
- Overseeing all EHO compliance
- Ensuring well-equipped kitchens are proactively well maintained
