Chef de Partie – Luxury Rural Estate
Department: Wine Tourism – Hospitality
Reports to: General Manager – Wine Tourism
About Us
Located in the heart of the South Downs, our award-winning estate is dedicated to producing exceptional wines and creating unforgettable guest experiences. We pride ourselves on quality, sustainability, and a commitment to excellence — values we extend to every plate we serve.
The Role
We’re looking for a passionate Chef de Partie to join our vibrant kitchen team, working with seasonal, locally sourced ingredients to create memorable dishes for our guests. You’ll play a key role in maintaining high culinary standards across the estate, supporting menu development, and ensuring smooth day-to-day kitchen operations.
Key Responsibilities
* Prepare and cook dishes from our seasonally changing menus.
* Deliver high-quality food consistently and efficiently during prep and service.
* Support the Head Chef and Sous Chefs in all aspects of kitchen management.
* Uphold and promote food safety, hygiene, and HACCP procedures.
* Take responsibility for your section and assist across all areas of the kitchen when required.
* Maintain operational standards and contribute ideas to improve quality and guest satisfaction.
* Record and maintain food safety documentation, including temperature checks.
About You
* Proven experience as a Chef de Partie or strong Commis ready to step up.
* Passionate about seasonal, quality-driven cooking.
* Professional, reliable, and committed to high standards.
* Adaptable, collaborative, and eager to learn new skills.
* Strong attention to detail with a disciplined approach to work.
* Full UK driving licence and your own transport are essential — the estate is set in a rural location with no nearby public transport, and access requires walking a further distance from the village.
* Able to work evenings; no on-site accommodation is available.
Why Join Us?
You’ll be part of a close-knit, high-performing team within a unique and inspiring setting. We value collaboration, creativity, and continuous improvement — and we take pride in looking after our people as well as our guests.
If you’re ready to bring your skills and enthusiasm to one of England’s most celebrated rural hospitality destinations, we’d love to hear from you.
