The ideal candidate will have a strong culinary background and experience in a fast-paced, high-volume kitchen, with all dishes made in house, including all brining and smoking, experience working within a smoke house style kitchen would be an advantage, but as all dishes are made in house a background working with fresh food in a casual fine dining background is a must.
