We're looking for a Head Chef who shares our passion for Mexican cuisine, leading our kitchen to deliver fresh, flavour-packed dishes that keep our guests coming back.
Key Responsibilities
* Lead the kitchen team to deliver consistently high-quality, authentic Mexican food.
* Create, refine, and innovate menus that reflect traditional Mexican flavours with a modern twist.
* Oversee day-to-day kitchen operations including prep, service, and cleaning standards.
* Manage stock, suppliers, and ordering, ensuring fresh ingredients and controlling costs.
* Train, coach, and inspire chefs and kitchen assistants to develop their skills.
* Ensure compliance with all food safety, hygiene, and allergen standards.
* Monitor quality, presentation, and consistency of every dish leaving the kitchen.
* Drive kitchen performance, hitting GP%, labour, and wastage targets.
* Collaborate with front-of-house and management teams to deliver a great guest experience.
Requirements
* Previous experience as Head Chef or Senior Sous Chef in a busy, high-volume restaurant.
* A passion for Mexican cuisine and knowledge of authentic cooking techniques.
* Strong leadership skills with the ability to motivate and develop a team.
* Excellent understanding of food safety, HACCP, and allergen management.
* Creative flair for menu development using fresh, seasonal ingredients.
* Organised, calm under pressure, and driven to deliver high standards.
* Commercial awareness to manage budgets and achieve financial targets.
