Sommelier
Location: Rockliffe Hall, Darlington
Salary: £28,000-£30,000 per annum
Hours: Fulltime - 45 hours per week
Reports To: Restaurant Manager and Food & Beverage Manager
Job Purpose:
The Sommelier is a guest‑facing specialist role, responsible for delivering exceptional wine service within one of the resort’s signature dining venues. Working closely with the Head Sommelier and the restaurant’s front‑of‑house team, this position plays a key role in elevating the dining experience through knowledgeable, engaging, and polished interaction.
Focused on wine guidance, pairing recommendations, and refined service, the Sommelier ensures every guest interaction reflects the luxury standards and hospitality values of Rockliffe. Acting as an ambassador for wine service excellence within the venue, you will support seamless floor operations, enhance guest enjoyment, and contribute to a distinctive and memorable dining experience.
Key Responsibilities of the Sommelier:
* Deliver refined, polished wine service throughout all service periods within the restaurant
* Guide guests confidently through wine selections, adapting recommendations to individual preferences and levels of wine knowledge
* Ensure wine service complements service pacing, enhancing the dining experience without disruption
* Uphold the highest standards of wine presentation, etiquette, timing, and attention to detail
* Act as the wine service specialist on the restaurant floor, supporting seamless front‑of‑house operations
* Work collaboratively with management, service teams, and the kitchen to ensure a smooth and cohesive guest journey
* Maintain a visible, professional presence on the floor, engaging naturally with guests during service
* Lead by example in professionalism, composure, and service style, particularly during busy or high‑profile services
* Support and guide team members with wine knowledge, service techniques, and guest engagement
* Handle guest questions and feedback with confidence, clarity, and discretion
* Ensure responsible alcohol service and full compliance with health, safety, and food hygiene standards
* Maintain exemplary standards of personal presentation, grooming, and uniform at all times
