As an Executive Sous Chef, you will be responsible for the full food service across two kitchens. This includes managing menus for A la Carte, set lunches, extensive cocktails and bar service, weddings, breakfast, and room service. You will oversee one team of chefs across both sites, ensuring the highest standards are maintained. There is a separate pastry kitchen for desserts and an extensive afternoon tea business. This hands-on role requires excellent oversight and communication with multiple departments. The current turnover of the kitchen is approximately £2.5 million annually, with plans to increase this figure.
Key Responsibilities:
* Oversee the preparation of all dishes within the two kitchens
* Issue clear instructions to Sous Chefs and ensure these are followed by all sections
* Stay updated with industry trends and collaborate with the Executive Chef to create innovative, nutritionally balanced menus
* Review menus with a focus on seasonality
* Maintain accurate stock records and conduct efficient stock takes
* Support the Executive Chef in developing menu schedules, recipes, and allergen information
* Manage costs proactively to stay within the hotel’s budget
* Ensure high standards of food quality across all areas
* Implement consistent plating guides for all menus
* Ensure accurate ordering and proper stock rotation
* Use preferred suppliers whenever possible
