Following substantial investment into the property — including a brand-new £60,000 kitchen installation and extensive refurbishment throughout — the business is entering a new chapter with a clear focus on elevating standards, strengthening the food offering, and building a motivated, quality-driven team.

The Role
As Sous Chef, you will work closely with the Head Chef and General Manager to help develop and deliver a refreshed, quality-led food offering across the hotel's dining outlets.
You will:
* Support the day-to-day running of the kitchen
* Lead service in the Head Chef's absence
* Maintain high standards of consistency, presentation, and organisation
* Assist with menu development using seasonal, locally sourced produce
* Train, mentor, and develop junior chefs
* Manage stock control, GP awareness, and kitchen compliance
* Contribute to a professional, motivated brigade culture
This role suits either an experienced Sous Chef or a strong Junior Sous ready to step into a broader leadership position within a structured, quality-focused environment.
About You
* Experience within a quality-led hotel, rosette or strong fresh-food environment
* Confident running service and supporting brigade management
* Organised, calm under pressure, and commercially aware
* Passionate about seasonal produce and modern British cooking
* Motivated by being part of a business relaunch and long-term growth
Package
* £35,000–£40,000 base salary (depending on experience)
* Plus tronc
* Live-in accommodation available (circa £60 per week, subject to availability)
