We are actively seeking a new Sous Chef to help prepare and cook delicious food for the Castle Inn (awarded South West pub of the Year in The Trenchermans Guide).
Alongside the Head Chef, you will be responsible for overseeing food and kitchen operations at the Castle Inn and will lead and inspire the kitchen and service teams to deliver an excellent guest experience.
Menu development is a key part of this role, requiring a thorough understanding and passion for food and flavors. A keen eye for local and current food trends will be essential.

Role Responsibilities
* In the absence of the Head Chef, lead and inspire the kitchen and service teams to deliver excellent guest experiences.
* Create original and seasonal food menus.
* Motivate the kitchen team to maintain high standards of food preparation and cooking.
* Conduct regular training sessions focused on products and skills for the kitchen and service teams.
* Ensure compliance with Health & Safety regulations and manage cleaning and maintenance schedules.
* Collaborate with the F&B Manager, Head Chef, marketing, and events teams for effective food operations during service and events.
* Adhere to stock management systems, maintain stock levels, and ensure stock rotation.
* Implement and monitor food wastage controls.
* Promote the Brasserie concept passionately to the team.
* Understand costs and charges related to food operations, maintaining food cost and GP margins within budget.
* Ensure operational excellence in a busy kitchen, following Standard Operating Procedures.
* Assist with ordering, stock control, and procedural standards.
* Participate as a team member within the F&B Department.
* Attend daily and weekly meetings as required.
* Ensure all kitchen equipment is functional and repairs are reported.
