Guillam Coffee House is a young, independent speciality coffee chain dedicated to serving the finest single-origin coffee within a warm, community-driven environment. We opened our first store just two weeks before the initial lockdown was announced, and through resilience, adaptability, and relentless hard work, we not only survived but thrived.

We don't just follow industry norms—we think from first principles and tackle every challenge with a fresh perspective. As we prepare to open our sixth and largest location, we're reimagining all-day dining. This flagship site will be a true destination, where meticulous attention to detail, combined with incredible coffee and food, will redefine the café experience.

The role:

This is a dynamic, fast-paced role, ideal for someone who thrives in hands-on environments and doesn’t shy away from rolling up their sleeves. As an Operations Executive, you’ll play a crucial role in supporting the quality, consistency, and overall performance of our café operations. You'll work closely with our on-site teams and leadership, driving improvements, achieving results, and pushing our business forward.

You'll gain deep operational insights—both behind the bar and in the kitchen—so be prepared to immerse yourself on-site while also supporting essential operational tasks from our office.

Responsibilities:

Your responsibilities will include, but are not limited to:

* Regularly spending time in-store to support teams, identify challenges, and resolve operational issues.
* Ensuring our high standards of service, product quality, hygiene, and presentation are maintained across all locations.
* Supporting café managers with implementing new initiatives and operational updates.
* Assisting in new projects, new site launches, internal audits (operational, health & safety, food safety, and brand standards), and continuous improvement initiatives.
* Owning specific initiatives from the planning stage through to practical execution.
* Identifying opportunities to enhance efficiency, performance, and customer experience.
* Collaborating with various teams to ensure smooth project execution.
* Tracking key operational metrics such as service times, quality checks, and team performance.
* Acting as a key point of communication between café teams and the head office.
* Assisting with internal reporting and operational reviews.
* Embedding systems, processes, and culture consistently across teams.
* Supporting training, onboarding, and reinforcing our brand standards

Qualifications:

* A few years of relevant work experience—previous experience specifically in coffee or hospitality is a plus, but not mandatory. Transferable skills from other industries are highly valued.
* A strong work ethic and sense of ownership—you’re motivated by getting things done well and genuinely care about outcomes.
* Hands-on, proactive approach with excellent problem-solving skills and adaptability.
* A clear and respectful communicator capable of building trust quickly with different teams.
* Good knowledge or willingness to quickly learn food safety and health & safety standards.
* Tech-savvy, comfortable using spreadsheets, project management tools, or stock systems.
* Flexible and willing to regularly travel across our London-based café locations.
* Genuine enthusiasm for hospitality, teamwork, and joining us on this exciting growth journey.
