Lead, inspire, and develop the confectionery team, promoting accountability and craftsmanship. Report directly to Operations Manager with performance updates. Plan and oversee daily/weekly production schedules for efficiency and on-time delivery. Monitor team performance, conduct reviews, and address training or performance gaps. Optimise labour planning and resource allocation. Maintain strong collaboration with other bakery departments Develop new confectionery products aligned with trends, customer demand, and commercial goals. Review and refine existing product range to improve quality, profitability, and relevance. Conduct product trials, tastings, and testing to ensure brand standards. Manage recipe development, costing, and documentation for scalability and margin control. Identify innovation opportunities while respecting heritage and brand identity. Oversee day-to-day operations of the confectionery department. Ensure all products meet company recipes, specifications, and production schedules. Maintain and elevate product standards for taste, appearance, consistency, and finish. nsure compliance with food safety legislation and company policies.
