The Hotel and Kitchens:
* Two distinct concepts: Relaxed fine:dining bistro + exclusive 3:Rosette tasting menu (foraged/garden:led)
* Team: Focus on upskilling and full training
* Produce: In:house bread/butter, fermentation/preserves, wild, local ingredients
The Ideal Junior Sous:
* Experience in fine dining/hotels (1+ year in current role preferred)
* Passion for seasonal produce, foraging, or fermentation
* Strong section skills (any station considered)
* Team player ready for a high:growth environment
