Job Summary
Responsible for:
· Line managing all employees working in the domestic and kitchen department
· Inducting, supervising and training all the domestic and kitchen employees in all kitchen and domestic procedures in conjunction with the Domestic Supervisor Chef
· Planning the rotas with the Domestic Supervisor Chef
· Ordering of provisions for the domestic and kitchen department in conjunction with the Domestic Supervisor Chef.
Cooking meals whilst on duty
Daily helping and checking the dining areas are clean and ready for students and guests
Taking the lead on planning catering and setting up and clearing up for functions (e.g. Diaconate weekends / Candidacy Masses)
Managing the preparation, cooking and storage of food while you are on duty
Preparing food separately for people with special diets and allergies
Monitoring costs and selecting and reviewing domestic or kitchen suppliers
Helping to wash and clear up after meals as required
Attend meetings when necessary and communicate with Vice Rector concerning guests, special events and employee issues
Update computerised diary of meal & refreshment hospitality requirements (e.g. meetings / candidacy Masses)
During non-term time, reviewing health and safety procedures and paperwork, writing menus for term time and special events
During non-term time, organising deep cleaning of main kitchen.
Managing the kitchen HACCP, cleaning rotas and issues around the kitchen.
Complete HACCP forms (i.e temperature of food, cleaning) during each shift.
Must attend health and safety courses when requested.
Must liaise and communicate with the Estates Manager on matters of Health & Safety relating to the kitchen.
