Head Chef – The Nelson (Traditional Pub)

We're a classic Ipswich pub serving fish & chips, pies, burgers, steaks and proper Sunday roasts. You'll lead a small team, cook from scratch, run the pass, plan seasonal specials, keep spotless records and hit GP.

What you'll be doing

* Menu & specials: Plan and cost a seasonal pub menus with the owners and weekly specials; write clear specs and recipe cards; manage an accurate allergen matrix.
* From‑scratch prep & service: Sauces, gravies, batters, roast joints, puddings; run the pass, manage ticket times, and plate consistently.
* Food safety & hygiene: Keep EHO‑ready records, strong allergen controls, HACCP, cleaning schedules, and a tidy, safe kitchen.
* People leadership: Train, rota and support a small BOH team; set the tone for punctual, positive services.
* GP, stock & suppliers: Cost dishes, hit agreed GP, portion correctly, control waste, rotate stock (FIFO), place orders and build good supplier relationships.
* Equipment care: Keep kit clean and safe; report faults early; manage daily/weekly checklists.
* FOH partnership: Work closely with the GM/FOH so service feels smooth for guests.

What you'll bring

* Solid experience as a Head Chef (or strong Sous ready to step up) in a busy pub/gastro‑pub.
* Food Safety Level 3, confident allergen management, and tidy record‑keeping.
* A calm, coaching style; pride in presentation; sharp eye on costs and consistency.

Pay, hours & perks

* Salary to advertise: £34,000–£38,000 (DOE) + tronc/tips.
* Hours: Full‑time, typically 45 hrs, evenings/weekends on rotation.
* Perks: Meals on shift, staff discount, uniform, pension, funded refreshers/training.

What success looks like

* Food Hygiene Rating 5, clean audits, and safe allergen handling.
* Consistent, great‑looking plates and solid ticket times—especially on Sunday roasts.
* GP and labour on target, low waste, well‑trained team, and strong guest feedback.
