Chelmsford City Racecourse opened its doors in 2015 and since then has gone on to become one of the busiest racecourses in the UK. By providing some of the highest prize-money in British racing, the racecourse routinely attracts some of the most successful and prominent trainers and jockeys in the world.

JOB SUMMARY
The Chef is a crucial team member in our professional kitchen, and attention to detail, culinary skills, and ability to work well under pressure contribute significantly to the overall success of our kitchens. The main function is to assist the brigade in the preparation, cooking and delivery of food in the various food outlets across the racecourse.
KEY ACCOUNTABILITIES
Section Management:
* Ensure that all dishes from the assigned section are prepared according to the established recipes and standards.
Food Preparation:
* Ensure your section is kept clean, tidy and hygienic at all times.
* Prepare and cook food items as per the recipes and guidelines provided by the chef or sous chef.
* Monitor portion control, freshness, and quality of ingredients.
* Wrapping, labelling and storing raw and prepared food as per Hygiene regulations.
* Responsible for cleaning down your section after service
* Support/help/prep main kitchen and other areas when required (eg Christmas & Large events).
Supervision of Commis Chefs and Kitchen Staff:
* Provide guidance and supervision to junior chefs (commis chefs) working in the section.
* Train and mentor new kitchen staff.
Quality Control:
* Maintain high standards of food quality, presentation, and taste.
* Conduct regular taste tests and inspections to ensure consistency.
Timing and Efficiency:
* Coordinate with other chefs and kitchen staff to ensure that all dishes are prepared and served on time.
* Manage the timing of cooking different components of a dish to ensure that they all come together perfectly when served.
Inventory and Stock Control:
* Assist in managing inventory levels for the section.
* Notify the Sous Chef or relevant authority when stock is running low and needs replenishment.
Menu Development:
* Collaborate with the chef or sous chef in developing new dishes and updating the menu.
* Suggest improvements to existing recipes.
Communication:
* Maintain effective communication with the kitchen team and other staff members.
* Relay information regarding special orders or dietary restrictions.
Flexibility:
* Be adaptable to changes in the menu, kitchen procedures, or staffing requirements.
* Assist in other sections or tasks as needed.
Health and Safety
* Follow and enforce kitchen health and safety standards.
* Ensure cleanliness and sanitation in the assigned section.
* Aware of and adherence to, all COSHH & HACCAP regulations relevant to your working area.
* To comply at all times with Health and Safety regulations and safe working practices in accordance with current legislation and as detailed in the Company’s Health and Safety Policy and Procedures.
Any other duties that may reasonably be required by the Directors of Chelmsford City Racecourse.
