Job Description
The Junior Sous Chef plays a pivotal role within the main kitchen of our five-star hotel, supporting the Executive Chef in overseeing daily culinary operations across breakfast, in-room dining, bar snacks, and function catering. The role is hands-on and supervisory, ensuring the kitchen operates to the highest standards of quality, efficiency, and cleanliness.
You will assist with menu development, supervise kitchen sections during peak periods, and help lead the team in delivering consistent, elegant dishes that meet the expectations of a luxury environment. The Junior Sous Chef also supports staff training and contributes to the seamless execution of large functions, day-to-day hotel services, and special events. This is a highly collaborative position requiring excellent organisation, leadership, and culinary skills to ensure smooth kitchen operations throughout all food service outlets.
RESPONSIBILITIES
* Support the Executive Chef in daily kitchen operations across all outlets, including breakfast service, functions, room service, and bar food.
* Supervise and lead specific kitchen sections during prep and service, ensuring food quality and consistency meet five-star standards.
* Assist in planning and executing high-quality menus for hotel functions, meetings, and special events.
* Coordinate with front-of-house teams to ensure efficient service during banquets and private dining.
* Oversee breakfast mise en place and service to ensure timely, fresh, and well presented dishes.
* Ensure timely preparation and dispatch of room service and bar menu orders in accordance with hotel standards.
* Monitor portion control, food waste, and stock rotation; ensure cost-effective practices are upheld.
* Train and mentor junior kitchen staff, supporting skill development and consistent performance.
* Conduct daily checks to ensure cleanliness, organisation, and compliance with health and safety standards.
* Contribute to new menu ideas and recipe development under the guidance of the Executive Chef.
* Step into the Sous Chef role in their absence when required.
Qualifications
To be successful you will have:
* 2+ years experience in a similar position
* Knowledge of breakfast buffet and A-La-Carte is required
* Solid knowledge of various cooking procedures and methods
* Excellent communication skills
* Positive, proactive attitude and a passion for cooking
* Availability to work morning shifts across a 7 day rotating roster (including weekends and public holidays)
