The Royal Marsden Hospital Sutton requires a full-time Head Chef within the catering department, providing food for patients, staff, and visitors. Experience in a similar role is essential.
Main duties of the job
To provide and maintain the highest level of catering service possible. Ensure the safe production and monitoring of meals and catering services. Maintain and improve high standards. Safeguard hygienic and safe working practices among staff, and monitor departmental standards daily. Ensure that food for staff, patients, visitors, and functions is of the highest standard across NHS wards, private care wards, the crèche (Sutton only), and retail areas, within financial constraints.
Detailed job description and main responsibilities
* Ensure a safe and efficient catering service in the absence of management.
•Manage all operational aspects of the catering service in the kitchen daily, including food distribution.
•Implement and review control systems with management to ensure good practices, monitoring, and adherence to HACCP and other safety plans.
•Recruit and select staff appropriately; compile cost-effective staff rotas.
•Develop and implement monitoring packages; identify cost improvements, income opportunities, and practice changes. Maintain good security practices regarding cash handling and stock controls.
•Act in accordance with the Trust’s disciplinary and grievance procedures when necessary.
•Prepare, present, and serve food for patients, crèche, staff, and functions using standardized recipes, meeting quality standards set by senior management and at a skill level of at least C&G 706 1 and 2 or NVQ Level 3. HACCP Level 3 and advanced food hygiene Level 3 certifications are required.

Specific Experience
* Recognized qualifications in Maths & English
* Certified knowledge of advanced food safety and HACCP (Level 3 or 4)
* Certified cookery qualifications (Levels 1, 2 & 3)
* Experience working in catering
* Experience supporting senior staff in a similar role
* Ability to understand and follow operating procedures
* Awareness of food safety, hygiene, allergens, risk management, and H&S practices, with willingness to undergo training
* Good task prioritization skills and quality service delivery experience
* Experience managing catering staff
