Key West Bar & Grill is situated on the iconic Bournemouth Pier and is open 7 days a week serving breakfast, lunch and dinner. Key West is also a popular venue for dinner shows, parties and weddings.
We are looking for a full time Sous chef.

Key Responsibilities:
Kitchen Leadership & Operations
* Assist the Head Chef in managing day-to-day kitchen operations
* Take full charge of kitchen operations during the Head Chef's absence
* Supervise and coordinate activities of kitchen staff to ensure smooth service flow
* Communicate effectively with front-of-house managers to maintain timing and food quality
Food Preparation & Quality Control
* Ensure that all food is prepared and presented according to recipe specs and plating standards
* Maintain consistency in flavours, texture, and appearance of dishes
* Perform quality checks on ingredients and finished dishes before they leave the kitchen
Team Supervision & Development
* Train, mentor, and motivate kitchen staff to achieve high performance
* Monitor staff performance and provide feedback or corrective action as necessary
* Assist in scheduling and planning rotas and staff levels to ensure appropriate coverage
Inventory & Cost Control
* Monitor stock levels and assist with ordering food and supplies
* Control food costs through effective stock management and portion control
* Track wastage and implement reduction strategies
Health, Safety, and Cleanliness
* Enforce and uphold all food hygiene and sanitation regulations (HACCP, local health codes, etc.)
* Ensure kitchen cleanliness, proper equipment maintenance, and staff hygiene compliance
* Conduct regular inspections and maintain logs for health and safety compliance
Menu & Recipe Development
* Collaborate with the Head Chef and upper management team on menu design and seasonal updates
* Test and refine new dishes, ensuring they align with the restaurant's vision
* Offer creative input and support in elevating the dining experience
Administrative & Reporting
* Assist in documenting recipes, training materials, and SOPs
* Help prepare reports related to labour, food costs, inventory, and stocks.
* Participate in kitchen meetings and contribute to continuous improvement plans
What We're Looking For:
* 3-5 years of experience in a professional kitchen and minimum of 2 years in a supervisory role in a fast-paced, high-volume kitchen
* Culinary diploma or equivalent practical experience preferred.
* Excellent leadership, communication skills and team management abilities.
* Strong knowledge of kitchen operations, culinary techniques, food safety and sanitation standards
* Ability to work under pressure and maintain composure during busy service
* Passionate about innovation and culinary trends
* High attention to detail and commitment to quality
* Flexible schedule — evenings, weekends, and holidays as required
