AKI is a contemporary and stylish Japanese restaurant and lounge bar, originating in the vibrant capital of Malta, Valletta. Known for its modern take on authentic Japanese cuisine, AKI offers a unique dining experience with a refined menu featuring sushi, robata grill dishes, and signature cocktails, all within an elegant and sophisticated ambiance. Building on its success and reputation in Malta, AKI is now expanding its reach and is set to open a new location in London, bringing its distinctive Japanese culinary experience to a new international audience. This marks an exciting step for AKI as it ventures outside of Malta for the first time.
Following the successful establishment of AKI in Valletta, Malta, and with our exciting upcoming launch in London, we are now looking for a talented and innovative Head Sushi Chef to join our team.
The Role
The ideal candidate will have a deep understanding of traditional and modern sushi techniques and a strong commitment to quality and consistency.
Key Responsibilities: Lead and manage the sushi kitchen team with professionalism and precision
Design and execute an innovative sushi menu that aligns with AKIs brand identity
Ensure the highest standards of food quality, hygiene, and presentation
Maintain control over sushi ingredients, inventory, and waste
Collaborate with the Executive Chef and front-of-house teams to ensure seamless service
Uphold health and safety regulations, including HACCP standards
Train and mentor junior sushi chefs to support their growth and development
Stay up to date with sushi trends and culinary innovations
Job Requirements Minimum 5 years of experience as a Sushi Chef in high-end or high-volume Japanese restaurants
Strong knife skills and mastery of sushi preparation techniques
Proven leadership and team management abilities
Attention to detail and a passion for authentic Japanese cuisine
Good understanding of ingredient sourcing, storage, and cost control
Knowledge of food safety and hygiene standards
Ability to work under pressure in a fast-paced environment
Fluency in English; additional languages are a plus
