Apprenticeship Commis Chef Hospitality and Catering Based at the Rye hill campus, Newcastle College requires a dedicated, enthusiastic, and committed person to take on the role of commis chef apprentice with in a fast paced and busy environment and be keen to grow within the kitchen. Our Commis Chef will be passionate about food and hospitality, and will be able to deliver high quality dishes according to a spec. This is an exciting opportunity to join a well-established kitchen where you will have opportunity to develop and grow. The main responsibilities of this role include working within the various kitchens within the college portfolio and to support the chef instructor as well as the below duties - Take part in food safety training in line with current legislation Supporting senior chefs Prepare ingredients Cook fresh ingredients using various cooking methods and techniques Plating and presentation of food Portion and stock control To ensure daily, weekly, and monthly cleaning duties are carried out as instructed by senior chefs To help and maintain a maximum yield in the kitchen in relation to the gross profit and wastage As a commis chef you will be expected to work in all areas making sure they are always kept organised and clean, working with staff and students throughout the day making sure all areas are kept to the standards expected from NCG. They will follow the daily prep and cleaning schedules as well as guidance from the head chef to make sure all relevant paperwork is correct and up to date. This post requires ideally a good background in hospitality and catering and the candidate must have a proven track record in the relevant area. They will have to work toward a level 2 in food safety and also a develop a good understanding of COSHH. An ability to self-manage workload. The hours of work will be flexible and may include evening and weekends according to demand.
