INTRODUCTION
A great opportunity to join our established family run business on the stunning West Wales coastline in the picturesque Georgian town of Aberaeron.
GENERAL:
· Prepare and cook breakfast, lunch and dinner service on a daily basis alongside the team for a smooth-running service showing excellent communication skills. And overseas the management of the kitchen in the absence of the head chefs.
· Multi-task and work efficiently in a fast-paced and busy environment.
· Ability to produce excellent, high standard and seasonal food. Writing and developing menus alongside your team and the Hive management.
RESPONSIBILITIES:
· Continually checking prep levels whilst organising, updating and completing prep lists.
· Continually checking ingredient levels at the end of every shift and ordering stock for kitchen and front of house.
· Ensure all elements on dishes meet Hive standards before sending out.
· Manage portion control to be cost effective and ensure your team follows suit.
· Ensuring the kitchen meets all regulations including sanitary and food safety guidelines.
· Being responsible for health and safety.
· Being responsible for food hygiene practices.
· Deal with customer special orders and communicating with FOH management on this.
· Deal with any customer complaints effectively.
· Deal with maintenance issues when they arise in the kitchen.
TEAM MANAGEMENT:
· Write and manage the kitchen rotas in the absence of the head chefs, including your team’s holidays.
· Attend Managers’ meeting with relevant feedback from your department.
· Take responsibility for training and supporting new kitchen staff in the absence of the head chefs.
· Take ownership of your team’s performance by training, supporting and communicating effectively, ensuring that service continues to run smoothly on days when you are not working.
· Always display passion, high energy and a positive mental attitude when working with your team.
