We are looking for an experienced and capable Head Chef to manage all of our kitchen and catering operations in New Inn, a stunning independent pub and coaching inn, in the heart of the thriving village community that is West Coker. This role can have an immediate or a delayed start for the right person.
You will be working with and responsible for a team of 3-4 regular staff.
You will be involved in all aspects of the menu and food preparation. This is a working senior position - not wholly executive - however working alongside the GM with menu planning, costings, stocktaking, ordering, rota/staff deployment and all usual H&S and EH compliance protocols are an essential part of the role as in any professional, commercial kitchen.
The current menu offerings are lunch and evening meal service every day with Sunday Lunch also and a relatively new breakfast service being introduced as we have 4 coaching inn/hotel rooms (2 more being refurbished).
There is the possibility of accommodation (one studio maisonette on site, and other accommodation a mile from The Inn), subject to separate arrangements of course.
We expect this senior role to be performed over 5 to 6 days/40-46 hours per week.
**The salary ranges above are aggregate and includes the usual share of gratuities/discretionary service charge.
SUMMARY JOB DESCRIPTION & REQUIREMENTS
A solid background and experience at in a similar restaurant/food pub service environment.
Efficient food preparation and delivery in a busy service
Ability to execute and direct all day-to-day kitchen operational duties including food preparation, menu planning (with GM), costing menu and events, directing and deploying kitchen colleagues, stock-taking, ordering, quality control, Catering H&S ad EH systems
Ability to work with GM and wider team
Passion and pride for good food and menu creativity running alongside a good sense of 'home economics' and kitchen efficiencies.
Good communication skills (with colleagues, suppliers, customers and consultants etc)
Be able manage, motivate and train kitchen staff
Create and work to performance targets.
Assist the GM in all operations relating to the performance of The Inn as a whole.
Assist in expansion and improvement planning
