Successful and busy wholesale food business is looking for a full time head chef/manager for our kitchen in Southeast London. We produce high quality, handmade savoury pastries, pies and quiche, as well as desserts. We are seeking someone who is hardworking and willing to oversee a small team. Kitchen experience is required.
Favourable hours; straight shifts only. Hours to be discussed.
Duties and expectations include:
* Create weekly production plan
* Oversee production in the kitchen
* Understand the production plan, delegated via weekly schedule & organise the work amongst the team with the aim for efficiency, while maximizing staff hours
* Manage the daily production schedule
* Place weekly orders with approved suppliers
* Manage weekly stock counts
* Ensure clear communication with directors and team members
* Maintain and produce high quality, consistent food products
* Be focused on ensuring a happy and efficient team that is motivated to do a good job
* Be a problem solver who can quickly create solutions for issues that arise
* Ensure compliance at all time with all Health and Safety, Food Hygiene and other regulations, policies and procedures – including traceability, allergens and HACCP
* Complete shift checks & quality control checks
* Manage stock levels and ordering of ingredients, ensuring optimal stock levels
* Ensure the kitchen is immaculately clean at all times
* Carry out regular audits and spot checks to ensure standards are being met
* To store goods in appropriate manner with aim to preserve the quality of the product as best as possible
* To report any equipment failures
Requirements:
* Previous experience working in a production kitchen either as a manager or assistant manager seeking a promotion in job title
* Advance and strong knowledge of health and safety standards with HACCP knowledge preferred
* Hands on / team player
* Food Hygiene level 2 or higher
* Good timekeeping and reliability
* Ability to commute easily to Sydenham / Beckenham area
