A high-end pastry and bread production kitchen supplying some of Londons most respected dining rooms including Michelin-starred restaurants and 5* hotels, is looking for a Head of Production to lead the pastry arm of the operation. The foundation is classic French: heritage technique, elegant execution, refined flavour. The interpretation is modern, considered, and always beautiful.
The kitchen currently supplies circa 10 establishments daily, with a team of 15 across pastry, bread and chocolate. Your focus will be mainly pastry: maintaining finesse at scale, building rhythm and structure, and elevating consistency throughout.
The Role
Lead daily pastry production with precision, calm, and high standards
Refine processes and implement efficiencies without compromising craft
Develop and mentor a skilled, multicultural pastry team
Ensure products are consistent in taste, texture, finish and presentation
Guide seasonal development and bespoke items for luxury clients
Own quality control, hygiene, planning, and smooth communication across teams
You
You are a classically trained pastry chef with experience at senior level in luxury hotels, fine dining, or reputable production kitchens. You understand both artistry and structure and you lead from the front as well as the office.
