About the role
We are looking for a capable and passionate Head Chef to lead and inspire our team in Brambles Kitchen. This role will report to the Resort Executive Chef and you will have full operational responsibility for the kitchen as well as the training, development and wellbeing of your team. You will lead an established team of talented and committed chefs who will help you deliver amazing dining experiences for our guests.
About Brambles
Brambles Seafood and Grill is a guest favourite offering exceptional fresh food cooked with the best Scottish ingredients. The restaurant is open for breakfast, lunch and dinner as well as offering light snacks and freshly baked scones, catering for up to 300 covers per day. The ambience is relaxed and welcoming with warm Scottish hospitality from our front of house team and great food from the kitchen.
In this role you will:
* lead the team to deliver consistently great food
* maintain and further improve food standards in Brambles
* work closely with the Restaurant management team to deliver seamless service for our guests.
* ensure that all food safety procedures are adhered to and that the kitchen and store areas are maintained to the highest standard of cleanliness
* take the lead in delivering new dish and menu ideas for Brambles working alongside the Executive Chef.
* lead, manage and develop your team through regular one to ones and training and department communication.
* be responsibility for rota planning, payroll budgets and holiday mangement.
* work with the Executive chef to develop talent pipeline for the Resort within the kitchens
* review guest comments and scores for your areas, implement changes as required and share positive feedback with the team.
* deliver on food GP targets, reviewing performance regularly and implementing improvements where required.
To be a good fit for this role you will:
* be a strong leader with great communication skills
* have previous Head Chef experience working in a similar role
* have experience working in a fast-paced kitchen, cooking with fresh ingredients and delivering consistently high quality dishes.
* be a calm and focussed presence in the kitchen during service
* demonstrate a positive approach to training and development within your team
* enjoy working as part of a team and play an active role in the wider management team at the Resort
* enjoy everything that living and working on a beautiful Scottish island allows.
Salary is based on 48 hour week. Weekly hours may vary depending on the needs of the business. Overtime payments will be authorised on a monthly basis if required. Modern live in accommodation is available.
