Snr Chef De Partie Required
4 Day Week £30,000 Package
We are recruiting a Strong Chef de Partie to join our stunning village pub/restaurant. The site is a beautiful & uniquely Gastro Pub having a superb blend of traditional and contemporary décor. The site currently holds a Michelin Bib Gourmand, and is in The Good Food Guide, we focus on producing modern British cuisine.
We are Open from Wednesday lunch through to Sunday Lunch, being closed on Sunday evenings, Mondays & Tuesday.
There is a strong emphasis on using quality seasonal ingredients from award winning suppliers. With a strong food led trade, the five-chef brigade (plus KP's) can cater for around covers a week. There is the potential of live in accommodation for the right candidate.
The average working week for this role is 4 days over 7 & we are closed every Sunday Evening, Monday & Tuesday. Package includes Tronc (this maybe higher). Paid overtime will be offered / available to cover Holidays etc...
Snr Chef De Partie Role:
* Assume overall charge of a designated section in the kitchen
* Be able to work multiple sections
* Liaise with the senior team to develop and improve section(s)
* uphold strict legislation relating to environmental health requirements
* Participate in daily food preparation and service
* Offer input on seasonally inspired menus whilst sourcing best quality ingredients
* Train and develop junior members of the kitchen brigade
* Ensure kitchen fridges are hygienic and adopt stock rotation systems

* Candidate Specification:
* Candidates must have experience working to a minimum 1AA Rosette for a minimum of 2 years in a Chef De Partie position.
* Ideally candidates would have held same role in similar establishments
* can communicate fluently and precisely
* Have the ability to work independently and as part of a team, following recipes & direction
* Have a keen eye for fine detail
* Work closely with the head chef to ensure continuity on sections
