Gills & Co has become Sheffields go-to wine venue, known for exceptional bottles at great prices and a kitchen that complements them beautifully. Alongside regular service, we host wine tastings, private events, and a Sunday tasting menu - all of which require strong leadership in the kitchen.
To further bolster our growth, were looking for a Head Chef to lead our kitchen team. Were looking for someone who is organised, creative, and a clear communicator - someone who takes pride in delivering consistently high standards and enjoys being part of a growing, ambitious business.

What Were Looking For
* Proven experience as a Head Chef or strong Sous Chef ready to step up
* Passion for creating exciting, seasonal dishes that pair well with great wine
* Excellent organisational and leadership skills
* Strong understanding of kitchen GP, stock control, and health & safety
* A collaborative, team-first attitude
What youll be doing
Menu Development & Execution:
* Curate quarterly engaging, seasonal menus for regular service and Sunday tasting menus
* Ensure dietary needs are considered (e.g. full vegetarian tasting menu, gluten free, diary and vegan considerations within our regular menu)
* Finalise new menus at least one month ahead of launch, ensuring the following is executed:
o Full dish costings to maintain our target GP
o Allergen sheets, plating specs, and prep guides (in collaboration with the Sous Chef)
o Internal tasting sessions for feedback and final sign-off
o Work with the team to hit (and exceed) kitchen revenue targets
Kitchen Operations & Team Leadership:
* Run day-to-day kitchen operations with support from the Sous Chef
* Ensure service runs smoothly, with dishes consistently sent out on time and to spec
* Maintain strong communication with front-of-house, especially during pre-shift meetings
* Uphold high standards of cleanliness and organisation throughout service
Stock & Supplier Management:
* Order and manage stock to ensure quality, price and availability
* Build strong relationships with suppliers - reporting issues and managing credits with the accounts team
* Conduct quarterly stock takes, monitor par levels, and keep waste to a minimum
Hygiene & Food Safety
* Maintain our 5-star Environmental Health rating
* Implement a robust deep cleaning schedule
* Ensure daily tasks such as food and fridge temp checks, and cleaning logs, are completed and recorded
* Lead by example in creating a safe, clean, and organised kitchen at all times
