Sous Chef – RAAZ (Putney, London)
Reports to: General Manager (GM)
Works closely with: Head Chef
Role Overview
The Sous Chef supports the day-to-day running of the RAAZ kitchen, ensuring consistent food quality, smooth service, and strong kitchen discipline. Reporting directly to the GM, this role combines hands-on cooking with leadership, organisation, and cost awareness.
Key Responsibilities
* Support daily kitchen operations and lead service when required
* Ensure all dishes meet RAAZ standards for flavour, presentation, and consistency
* Oversee prep, mise en place, and station readiness
* Supervise and support junior kitchen staff
* Maintain food safety, hygiene, and allergen compliance at all times
* Assist with stock control, waste reduction, and cost awareness
* Communicate operational issues clearly with the GM
