Job Description Research & Development Specialist – Vault City Brewing Midlothian (Edinburgh area) Flexible - DOE 4-day working week Vault City Brewing isn’t your average brewery. Born in an Edinburgh kitchen in 2018, Vault City has grown from two beer lovers to a team of 30 - producing over a third of all the UK ’ s sour beers. Their beers are stocked by Tesco, Sainsbury ’ s, Morrisons, Waitrose and in over 250 independent bars, reaching drinkers in 20 countries. With their brand-new 34,000 sq ft site opening at Scotland ’ s BioCampus, this is a rare opportunity to join the UK’s most creative and unapologetically bold brewery at a pivotal moment in its journey. Now, Vault City is on the lookout for a Research & Development Specialist to help them push the boundaries of flavour and innovation - and bring wild ideas to life. What you’ll do Lead the creative development of new beers (and beyond with licences for cider and more!) Turn experimental ideas into real products. Experiment, test, refine - both in the lab and the kitchen. Collaborate with founders and team to shape the next generation of Vault City products. Engage with customers, fans, and international partners Be comfortable jumping in front of a camera now and then – the sour beer community loves seeing the creative process behind their favourite beers. What you’ll bring A curious, inventive mind with a strong understanding of product development or food/beverage science. A hands-on approach you love getting into the details of how things work. A passion for flavour, experimentation, and doing things differently. You don’t need to come from beer. What matters is your creativity and technical curiosity.
