The Role: We are seeking a skilled, creative, and dedicated Indian or Nepalese Chef with exceptional expertise in tandoor cooking and mixed grills. You will be the heart of our operation, responsible for maintaining the authenticity and high quality of our signature dishes.
Key Responsibilities:
* Masterfully prepare and cook our signature mixed grill items, including seekh kebabs, tandoori chicken, lamb chops, boti kebabs, fish tikka, and Nepalese specials like Sekuwa.
* Expertly manage and maintain the tandoor oven, ensuring optimal temperature and cooking conditions.
* Prepare and develop authentic marinades, spice blends (masalas), and chutneys from scratch.
* Ensure consistent taste, presentation, and portioning of all dishes.
* Maintain the highest standards of kitchen hygiene, health, and safety regulations (HACCP).
* Manage inventory, stock rotation, and ordering for your section.
* Train and mentor junior kitchen staff in tandoor and grill techniques.
* Contribute ideas to develop seasonal specials and new menu items.
What We're Looking For
* Proven experience as a Tandoor Chef or Grill Chef in a high-quality Indian or Nepalese restaurant.
* In-depth knowledge of Indian and/or Nepalese spices, marinades, and cooking methods.
* Exceptional skill in operating a tandoor oven and charcoal/gas grills.
* Ability to work efficiently and calmly under pressure in a fast-paced service environment.
* A keen eye for detail and a passion for impeccable food presentation.
* Strong understanding of food safety and hygiene standards.
* A team-oriented, positive, and hard-working attitude.
